In large sauce pan combine sweet potatoes, onions, stock, tomatoes, chickpeas, spices and peanut butter. Simmer until sweet potatoes are cooked, about 45 minutes. Add spinach and cook five minutes longer. Serve into bowls and top with Ginger Zarrots.
