Almond Apricot Energy Ball with Ginger Carrots

Ingredients

almonds

dried apricots

dried pitted dates

Ginger Zarrots
drained
1/2

dried coconut flakes
divided
Instructions
Place almonds in a food processor and chop. In stages add apricots, carrots, dates and 1/4 cup coconut. Process until finely chopped. Form into balls. Roll in remaining coconut. Refrigerate
