In a large Dutch oven, cook sausage, onion and garlic over medium heat until sausage is no longer pink and onion is tender. Stir in the Zauerkraut, apples, brown sugar, seeds, and potatoes. Either bake in a 350 degree oven for 45 minutes or continue to simmer covered on stove for an additional 20 minutes until potatoes are tender. Serve with dollop of fresh Zauerkraut and plain Greek yogurt to gain probiotic benefits. Garnish with minced parsley.
