Tempeh Bahn Mi with Fermented Ginger Carrots

Ingredients
  

  • 8 oz tempeh
  • 3 TBSP soy sauce
  • 3 TBSP brown sugar
  • 2 TBSP fish sauce or vegan fish sauce
  • 1 TBPS lemongrass
  • 1 tsp grated ginger
  • 1 tsp garlic
  • Radish sliced
  • Lettuce
  • Fermented Ginger Zarrots
  • 2-3 soft French rolls

Instructions
 

  • Cut tempeh into thin slices.
  • Mix sauces and spices to make marinade, coat tempeh with marinate and allow to soak for at least 30 minutes.
  • Sauté tempeh until warm, flipping after few minutes to cook throughly.
  • Fill rolls with cooked tempeh, lettuce, radish and fermented carrots.
