Fermented Ginger Carrot Energy Balls

  • 2 Tb. chia seeds
  • 1 c. Zarrots
  • 10 medium dates (pitted)
  • 1 c. coconut flakes (divided)
  • ½ c. walnuts or pecans
  • 1 Tb. maple syrup
  • 1 tsp. ground cinnamon
  • Pinch of salt
  • 2/3 c. rolled oats
  1. Put the chia seeds in a small bowl and add enough water to cover. Let sit for 15 minutes or up to 1 hour.
  2. Put the dates, ½ c. coconut, nuts, maple syrup, cinnamon, salt and oats into a food processor. Whirl until evenly broken down but not quite smooth. Add the chia seed gel and carrots and process until evenly blended to form a dough-like consistency, but again not smooth. Chill dough.
  3. Put the remaining ½ c. coconut into a bowl. Shape dough into 3/4 inch balls and roll into coconut. Repeat for remaining dough. Chill balls for at least 30 minutes. To store, refrigerate for up to 5 days or freeze for up to 4 mos. Makes 30, 15 servings
