Tabouli with Ginger Carrots

Ingredients
  

  • 1 cup bulgar wheat
  • 1 cup water
  • 2 cups parsley diced
  • 1 cucumber peeled, seeded and chopped
  • 1/4 cup mint diced
  • 3 TBSP olive oil
  • 3 TBSP lemon juice
  • 1/3 cup Ginger Zarrots
  • 1/4 tsp cumin
  • Salt and Pepper to taste

Instructions
 

  • Heat water to boiling
  • Add bulgar and remove from heat. Cover and allow bulgar to soften, up to one hour.
  • Add remaining ingredients and chill prior to serving.
  • Tabbouleh with Ginger Carrots by Zymbiotics is a refreshing pre and probiotic salad. It is nutritious and delicious and a unique variation on tabbouleh.
