Kimchi Kale Salad
Ingredients
Kimchi Kale Salad
- 3 cups of kale coarsely chopped
- 1/2 cup diced red bell pepper
- 1/2 diced red onion
- 1/2 cup chopped Zymbiotics Kimchi/Zimchi
Garlic Vinaigrette Dressing
- 1/2 cup olive oil
- 1/3 cup apple cider vinegar
- 1/4 cup tart juice cherry, cranberry or pomegranate
- 1 1/2 tsp. garlic powder
- salt to taste
Instructions
- Mix vinaigrette and set aside. Chop kale and place in container. Drizzle with dressing and mix well. Allow to sit for at least 30 minutes. Top with peppers, onions and kimchi/zimchi.
