Peel and dice sweet potato. Place on roasting pan, toss with olive oil and bake at 400 F. until soft and lightly browned, about 20-30 min. Allow to cool.
Place chick peas, olive oil, lemon juice, tahini and water in blender and puree until smooth, adding additional water if needed.
Add baked sweet potato, Ginger Zarrots and seasonings. Blend until desired texture. Use immediately or chill to store.
