White Bean Chicken Soup with Fermented Ginger Carrots

Ingredients
  

  • 1 lb Ground chicken
  • 3 Garlic cloves peeled and diced
  • 1 TBSP olive oil
  • 4 cups chicken broth
  • 1 TBSP thyme
  • 2 cups chopped kale
  • 2 cans white beans garbanzo, cannellini or navy
  • Pinch red pepper flakes
  • Ground pepper to taste
  • Ginger Zarrots

Instructions
 

  • In a large pot cook the chicken with olive oil and garlic until brown. Break the meat into small pieces as it cooks.
  • Add the broth, kale, beans and seasonings. Simmer until the kale is soft and fully cooked.
  • Serve into bowls and top with ginger carrots.
