White Bean Chicken Soup with Fermented Ginger Carrots
Ingredients
- 1 lb Ground chicken
- 3 Garlic cloves peeled and diced
- 1 TBSP olive oil
- 4 cups chicken broth
- 1 TBSP thyme
- 2 cups chopped kale
- 2 cans white beans garbanzo, cannellini or navy
- Pinch red pepper flakes
- Ground pepper to taste
- Ginger Zarrots
Instructions
- In a large pot cook the chicken with olive oil and garlic until brown. Break the meat into small pieces as it cooks.
- Add the broth, kale, beans and seasonings. Simmer until the kale is soft and fully cooked.
- Serve into bowls and top with ginger carrots.
