African Peanut Stew with Fermented Ginger Carrots
Ingredients
- 2 medium sized sweet potatoes peeled and cubed
- 1 medium onion diced
- 4 cups vegetable stock
- 16 oz can diced tomatoes add juice
- 16 oz can of chickpeas
- 4 cloves garlic diced
- ½ cup peanut butter
- 3 cups spinach or kale
- 1 inch fresh ginger peeled and grated
- 2 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp cayenne
- ½ cup Ginger Carrots/Zarrots garnish
- optional tofu or chicken thighs and rice or quinoa
Instructions
- In large sauce pan combine sweet potatoes, onions, stock, tomatoes, chickpeas, spices and peanut butter. Simmer until sweet potatoes are cooked, about 45 minutes. Add spinach and cook five minutes longer. Serve into bowls and top with Ginger Zarrots.
