Almond Apricot Energy Ball with Ginger Carrots

Ingredients
  

  • 1 cup almonds
  • 1 cup dried apricots
  • 1/2 cup dried pitted dates
  • 1/2 cup Ginger Zarrots drained
  • 1/2 cup dried coconut flakes divided

Instructions
 

  • Place almonds in a food processor and chop. In stages add apricots, carrots, dates and 1/4 cup coconut. Process until finely chopped. Form into balls. Roll in remaining coconut. Refrigerate
