Sauerkraut Casserole
- ½ lb raw Italian sausage removed from casings (or soy sausage)
- 1 large onion
- 2 cloves garlic chopped
- minced 2 cups Zauerkraut with juice plus additional for serving
- 2 medium organic apples
- sliced 2 Tb. brown sugar
- 1 tsp. caraway or fennel seeds
- 1 medium sweet potato (peeled and cut into small cubes (about 1½ c.))
- 2 small red or Yukon gold potatoes (cut into cubes (about 1½ c.))
- Black pepper to taste
- Plain Greek yogurt for serving Parsley for garnish
- In a large Dutch oven, cook sausage, onion and garlic over medium heat until sausage is no longer pink and onion is tender. Stir in the Zauerkraut, apples, brown sugar, seeds, and potatoes. Either bake in a 350 degree oven for 45 minutes or continue to simmer covered on stove for an additional 20 minutes until potatoes are tender. Serve with dollop of fresh Zauerkraut and plain Greek yogurt to gain probiotic benefits. Garnish with minced parsley.
