Wild Rice Beet Salad
Ingredients
- One cup wild rice blend cooked and cooled
- one stalk celery diced
- 1/2 cup dried apricots diced
- 1/2 cup dried cranberries
- 1/2 cup Beetz
- One mandarin orange peeled and diced
- 1/2 cup pecans diced and toasted
- 2 TBSP fresh parsley diced
- 2 TBSP olive oil
- 2 TBSP orange juice
- Salt to taste
Instructions
- Mix prepared ingredients together.
