Kimchi Potato Boats

Ingredients
  

  • 5 medium potatoes
  • 3 TBSP olive oil
  • 2 TBSP sesame oil
  • 3/4 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup Zimchi or Vegan Zimchi chopped
  • 4 slices bacon cooked and cut into pieces (optional)

Instructions
 

  • Carefully pierce side of potatoes once with fork. Bake at 425° for 40 min. Remove from oven and allow to cool. Cut in half lengthwise and scoop out center of potato, leaving a lip around each half to form a boat.
  • Save baked potato centers for another meal.
  • Mix olive oil with sesame oil brush over both sides of potato boats. Place cut side down and bake at 450° for 10 min or until they start to crisp.
  • Flip potatoes so that skins are down. Sprinkle with cheese and return to oven. Bake another 5 min or until cheese melts.
  • Allow potatoes to cool slightly. Top with sour cream and chopped kimchi. Sprinkle with bacon, if using.
