Almond Apricot Energy Ball with Ginger Carrots
Ingredients
- 1 cup almonds
- 1 cup dried apricots
- 1/2 cup dried pitted dates
- 1/2 cup Ginger Zarrots drained
- 1/2 cup dried coconut flakes divided
Instructions
- Place almonds in a food processor and chop. In stages add apricots, carrots, dates and 1/4 cup coconut. Process until finely chopped. Form into balls. Roll in remaining coconut. Refrigerate
