Quinoa Salad with Ginger Zarrots
Ingredients
- 1 cup quinoa
- 1 red pepper diced
- 1/2 cup snow peas cut into pieces
- 2 green onions diced
- 1/2 cup Ginger Zarrots
- 1/4 cup olive oil
- 1 tsp sesame seed oil
- 1 TBSP rice vinegar
- 1 TBSP lemon juice
- 1 TBSP maple syrup or honey
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
Quinoa
- Cook quinoa according to package instructions and cool. Place in large bowl. Add cut vegetables and ginger carrots.
Salad
- In small bowl mix oil, vinegar, juice and seasoning to make dressing. Pour over salad and stir until evenly coated. Serve immediately or chill to store.
